Step 1: Mix together 1 tablespoon of olive oil, salt and pepper. Spread them out on a baking sheet and bake until golden brown, 20 to 25 minutes.
While the cauliflower florets are roasting, make the chimichurri. Combine raisins, garlic, cumin, chili flakes and orange juice/zest in a sauce pot and stir in 1/4 cup water until simmering. Remove from heat and allow to cool.
Once your cauliflower steaks are charred and ready to serve, top each with a dollop of chimichurri sauce and some of its juices.
