Recently I made my very first pumpkin cookie. It was soft and pillowy, with an easy cream cheese frosting – absolutely delectable! After tasting them myself I knew they had to become part of my fall snacks repertoire – that’s when I came up with this gluten free pumpkin cookie recipe with cream cheese frosting – perfect little bite-size treats to snack on throughout the season! So here it is, my very own homemade recipe of gluten free pumpkin cookies featuring simple cream cheese frostings – enjoy!

Simply combine a spiced cake mix (any brand will do!) with pumpkin puree in an easy and quick recipe that is sure to become everyone’s new go-to treat.

Preheat the oven to 350 degrees. In a large mixing bowl, cream together butter and sugars until light and fluffy. Beat in egg and pumpkin puree while continuously mixing together the dry mix of flour mix, baking powder, baking soda, salt and pumpkin pie spice until well mixed into wet mixture. Pour dry mixture gradually into wet mixture while mixing thoroughly; refrigerate dough for one hour up to three days prior to baking.

As the dough will be very sticky at this stage, I recommend using an ice cream scoop or spoon to shape balls of dough into balls and drop onto a parchment-lined baking sheet for 12-15 minutes, rotating halfway through baking process to ensure even baking. Allow to cool on tray for several minutes before transferring onto cooling rack for further cooling.

After your cookies have fully cooled, use an offset spatula or pastry bag to apply generous layers of cream cheese frosting generously over each cookie. Don’t attempt this step until they’ve fully chilled as otherwise they could melt! These tasty cookies store well in the refrigerator, making this treat suitable for fall as well as any time of year!

If you don’t have a pastry bag or are going for something more casual, use a spoon to spread the frosting. Additionally, sprinkle extra cinnamon or pumpkin pie spice onto the cookies for an added burst of flavor!

To create cream cheese frosting, mix 8 oz of cream cheese with 6 TBSPS of butter and 1-2 Teaspoons of vanilla until smooth and creamy. Gradually add 1/2 Cup at a Time Powdered Sugar until it has all been added – beating after each addition so your frosting remains creamy!
