Ree Drummond Green Chili Chicken

Pioneer Woman star Ree Drummond has long been recognized for her friendly cooking shows on Food Network and blog. Recently she published “Frontier Follies: Adventures in Marriage and Motherhood in the Middle of Nowhere”, taking fans behind-the-scenes of life on her Oklahoma ranch. Drummond doesn’t shy away from sharing less-than-glamorous aspects such as cattle castration or her love of fried bull calves; even attending costume parties dressed up like cats to meow continuously can sometimes cause shock!
One of the highlights of her book is its abundance of hilarious anecdotes featuring members of her large and lively family. Drummond also opens up about her personal struggles, including miscarriage and making the difficult decision to give birth via C-section for her final baby. She offers many delicious recipes in her book, such as chili verde. This time-saving dish boasts some time-saving shortcuts and one “controversial” ingredient she believes adds depth of flavor. To create it, she combines butter, oil, onion, garlic, diced poblano peppers with tomato paste, chicken broth and rinsed beans; before incorporating shredded chicken for 2 hours of simmering time before stirring in cornmeal to thicken the sauce and a small splash of milk for added creaminess.
She offers another delectable recipe in her cookbook with her Enchilada Casserole using canned Rotel as opposed to making its own sauce, yet still manages to provide plenty of flavorful layers with chicken, cheddar and Monterey Jack cheeses as well as caramelized onions in an irresistibly tasty sauce that the entire family will savor! Perfect for weeknight dinners.
Drummond also shared her recipe for mango chile chicken, an ideal summer dinner dish. To start off this delectable recipe, the chicken was seasoned with chili powder, cumin and garlic before it was marinated with lime juice, olive oil, chipotle peppers and salt before being baked until golden-brown perfection. Drummond suggests serving this tasty treat alongside a big salad and some rice as a satisfying meal.
